Japanese Executive Chef (Native Japanese Speaker)

Location: Tsimshatsui

Job Responsibilities:

  • Responsible for creating and offering excellent Japanese cuisine and dining experience to the customers
  • Supervise the daily operation of the kitchen(s), including food production, food quality control, presentation and hygiene management according to the standards set by head office
  • Research, design and create new dishes and menu items; manage recipe preparation and quality of suppliers
  • Execute cost control planning such as food costing, inventory management and kitchen’s operating budgets
  • Manage and motivate the kitchen team to maintain adequate manpower to support kitchen operation; also responsible for selecting, training and disciplining staff
  • Maintain and raise profit margins on food through constant pricing reviews and market comparison

Job Requirements:

  • 10+ years of experience in Japanese cuisine, with over 3 years working as head chef in reputable restaurants or 5-star establishments
  • Strong sense of creative and innovative approach of food development with extensive knowledge in Japanese cuisine
  • Well-versed in managing the daily operation, including food production, food costing, food hygiene and work safety
  • Excellent interpersonal and communication skills with strong leadership and coaching abilities
  • Native in Japanese and conversational in English
